Any Tips or Ideas for Planning an Irish Non-catholic Wedding?

I'm not engaged yet (I'll jump the gun everytime until I get a ring on my finger!!!) but we are both Irish and I would love to have an Irish themed wedding, minus the religious part. Any cute or original ideas or thoughts appreciated.
