What Are Good Ideas for a Spanish Themed Wedding?

We are having a spanish-style wedding. Its going to be at a Spanish Monastery, bright beautiful flowers, awesome Mexican food, the brides maids are wearing beautiful brightly colored flamenco style dresses, we are having a margarita toast (instead of a champagne toast). What are some good ideas for favors, centerpieces, etc?

For favors:

Mexican wedding cake cookies. I love these things. You could put them in truffle boxes and tie a ribbon in your wedding colors around it.
